You will pay a deposit now and the remainder before you pick up your beef, based on hanging weight. Expect the hanging weight per quarter cow to be 150-200 lbs. The total amount of meat once cut and packaged will be anywhere from 50-70% of the hanging weight, depending on your butchering choices. You may also ask for extras such as: organ meats, tongue, suet, oxtail, marrow bones, and dog scraps.
$4 per pound hanging weight plus butcher fees (~$1/lb hanging weight). $25 discount for cash or check payment.
